At first glance they looked like potato pancakes but then when I saw the middle, my guess is plantains.
When I first saw them, I thought they were fried green tomatoes, esp. since this is tomato season. But then I saw everyones comments about tostones, which I had never heard of… so I did what I always do when I don't know what something is… I BINGed it (I like that even more than Google, you ought to try it)… and I must agree, from the pictures and recipes I saw, I must agree, they do look like tostones, or fried – more specifically DOUBLE FRIED – plantanes. Yours look just like every recipe I saw, NICE JOB!!
