I’m the type if mom that plans out the family meals for the week to include  homemade mashed potatoes & mac and cheese and made from scratch pizza dough. I like being able to prepare balanced meals that everyone will enjoy.  But that doesn’t mean I’m not the first to admit I rely in some cheats to get me through a busy week.

My grocery list usually consists of the things we need to get through the week but I like to toss in some “just in case” items such as Chicken Nuggets, Chicken Fries or Chicken Wings in case our dinner plans have gone awry.

I used Tyson Foods Crispy Chicken Strips for a new meal idea, a twist on Chicken Parmesan.

Chicken Parmesan Pockets

  • Crispy Chicken Strips (25oz package)
  • 2 tubes of refrigerated Pizza Dough
  • Italian Blend Shredded Cheese
  • Pasta or Pizza Sauce

Start by cooking chicken strips according to package directions.  Divide each pizza dough into 6 pieces and roll out into 6×8″ rectangles.

Chop cooked chicken into bite size pieces place a small handful on each rectangle of dough and top with sauce and cheese.

Pull up the corners to the top and press edges onto each other to seal closed.

Bake for 12-18 minutes until golden brown.  Serve with extra sauce and veggies for a balanced meal.

Modify this recipe to suit your family’s tastes by adding roasted red peppers, chunk mozzarella, spicy  marinara or Tyson Food Grilled Chicken Strips instead.

There are many ways to help the Boys and Girls Club of America. One of the simplest is to complete a quiz about all the things you may or may not know about The Boys and Girls Club of America and it’s history. For every 5 correct answers school supplies are donated to a member of the club.

JCPenney is also teaming up with the Boys and Girls Club of America by letting shoppers round up their store purchases to benefit the Club.

Are you sun care educated?

These days I apply sunscreen not just to me but to my children and husband. Our pool/beach bag has several bottles handy.

RMHC Day of Change

In 2009, Ronald McDonald House Charities raised over $19 million through the RMHC Donation Box program, which helped open 10 Ronald McDonald Houses, 15 Ronald McDonald Family Rooms, and 4 Ronald McDonald Care Mobiles, serving over 4 million children and families in need.

This year’s Day of Change is September 9, 2010.  RMHC is asking all the their supporters to drop off their spare change in Donation Boxes in McDonald’s restaurants. Donation Boxes are a really great way to get families involved in giving back to a meaningful cause – it’s those small acts of kindness and giving to RMHC that keep families together when they need it most.

Help make this day extra-special and this campaign a HUGE success for everyone.  That’s what RMHC is all about anyway … providing resources and stability to families so they can keep their children happy and healthy!

Public Service Announcement – No Expired Food!!

On Saturday after a month or so of planning we had our block party for the “Child Hunger Ends Here” campaign. Melinda worked her butt off to secure the moon bounce, the cupcake truck and to make sure there was enough food, drinks and raffles for everyone. She did a great job putting everything together and the day was awesome but there was one huge problem. The food donations!

To gain admission to the moon bounce all you needed to do was bring non perishable food items or a small financial donation. Most people brought food but some people did give food and money. It was great we had so much food I needed to load up the kids’ wagon 2 or 3 times to get all of the food to the van. The van was so full with food that the back end was kind of sagging due to the weight. We were so excited and proud that people stepped up and donated for a great cause.

On Sunday Melinda wanted to look through the food to see what was donated and she started to look at the expiration dates on the items. One of the first two items she pulled out of the bag was expired. We were hoping this was an isolated incident and that everything would be good but now we started to check every item in the van to make sure the dates were good. They weren’t and we found item after item with expiration dates 2, 3 and 4 years past the date. I understand a can or two but we filled up two 13 gallon trash bags with expired food. What a waste.

I was really mad and upset that this happened. This was supposed to be a fund raiser to help feed hungry child not a day to clean out your pantry and give old expired food so your child could go on the moon bounce. I understand people not wanting to go to the store to buy food when they have food at home but seriously people check the date. You shouldn’t even be eating it let alone donating it for someone else to eat. That just isn’t cool. I understand things and the economy are tight but if you aren’t able to give food that is not expired then do not give anything at all because all we did was just throw it away.

All in all it was a great day and when Melinda dropped off the food at the Maryland Food Bank on Monday the total weight of the donation was 338 pounds. Not a bad day if you ask me for one local block party but it could have been better if we didn’t have two trash bags full of waste. So this is my gripe and now a service announcement to all. If you are going to donate food to a cause pretty please make sure the item is not expired.
