Ribs are done when they can bend easily with just a little pressure and the meat is tender. The time it takes for ribs to cook will depend on how thick or thin they are, how much surface area of the rack you picked up in your tongs, and what type of grill you’re using. In general, thicker racks take longer than thinner ones because there’s more bone mass holding them together. If you have an oven-safe wire rack handy, place that inside a baking sheet before placing your ribs onto it; this should keep them from burning at high temperatures like those found right under the broiler flame.
