There are many different opinions on the internal temp of ribs when they’re done. The consensus is that it’s best to cook them at 300 degrees and not let them get too hot, but your personal preference may vary depending on what you want in a rib. We recommend cooking for 20 minutes per pound or until an instant-read thermometer reads 175 degrees Fahrenheit deep into the center of the meat.
