What’s For Dinner? – I Need You Help!

These are words that I ask every single night and Melinda is great with giving me an answer but lately nothing sounds good.  In our house we eat a lot of chicken, ground turkey, pasta and occasionally pork.  Over time there are only so many things you can make from these items.  Melinda had told me numerous times to come up with ideas if I don’t like the ones she has and I have tried but I come up empty. 

So that is the reason for this post.  I need your help.  If you have a recipe or idea on what we could have for dinner using the meats above let me know.  What the heck if you have a great recipe that doesn’t use the meats above let me know.  We are open to trying new things.  I want to thank you in advance for your help and I can’t wait to see what you have for me/us.

  2. As luck would have it, I’ve started on a quest to do a cooking show recipe each week (uploaded Crab Cakes last night).

    I think you should make Chicken Satay, or as I tell my kids, Chicken Lollipops. I actually call them “Chickensicles”. Here’s a sneak preview of my next cooking show recipe, for your eyes only.

    CHICKENSICLES

    1. Ideally, get chicken tenders (uncooked, unbreaded). If you have chicken breast, just cut ‘em into tender size. I then usually take a wooden mallet to the chicken. Mainly for fun, but also to flatten them just a tad. Don’t pulverize them, but if you can get them about 1/2-inch thick, you’re good. The marinade is good for about a pound of chicken so adjust as needed if cooking for a small army.

    2. In a medium bowl, combine:
    1/4 cup coconut milk (you can get this at any grocery store)
    1 teaspoon of salt
    1 teaspoon of sugar
    2 teaspoons of curry powder
    1/2 teaspoon fresh ground pepper (or to taste)
    1/2 teaspoon of ground coriander (not a huge deal if you don’t have this but don’t go without the curry powder. It’s too bland otherwise)

    3. Once stirred, place the chicken in the bowl to marinate in the fridge. I marinate for about 3 hours but I’m sure you can go longer. Because the chicken is thin it will add lots of flavor. I stir the chicken and marinade every hour to make sure it’s well mixed and covered.

    4. If you have wooden skewers (recommended) lace the chicken onto each skewer. It’s hard to describe in text, but you’re basically weaving the chicken on the skewer so it’s held firmly. If you don’t have skewers, no fear. You just lose the lollipop appeal.

    5. If cooking on a BBQ grill (doubtful this time of year) just cook until done. About 4-6 minutes per side on a medium-hot grill.

    But, if inside like us, I snip the skewers so they can fit in the pan. I heat the pan at medium-high and then add 2 Tablespoons of olive oil, swirling it around. Place the skewers in the pan to cook, about 3-4 minutes per side or until lightly browned (if you have a meat thermometer sensitive enough, hit 165 degrees).

    Regardless of the method, remove with tongs. The wooden skewers will cool before the chicken so they can still be hand held. :) When the skewers are cool to the touch, snip the sharp end (if not snipped already) and hand the kids a healthy “chickensicle”.

    Create a dip or sauce if you’d like. I like to dip them in a peanut sauce. My eldest uses Buffalo Wing sauce. My middle son uses nothing. And my daughter uses ketchup (as I cringe).

      Sounds pretty good. Also, when there is no snow on the ground in DE we will use the grill in the winter. Grilling is not a warm weather only sport!

  4. My dad just made us a great fish dinner with cod baked in a mixture of mayo and salsa – sounds weird but it’s good! He also says it’s very easy to make homemade fish n chips by cutting cod in small pieces, coating it in pancake mix, and deep frying it in oil. Then frying potatoes (or you could bake slices). Sounds yummy, right? :)

    I also like to make quiches with veggies and ham, SO good.
