For the last 7 years Friday night has been Pizza & Movie Night in the Babiak Household. It started with ordering pizza to buying dough from a local pizzeria to then making dough from scratch. We’ve had many variations of pizza with many different ingredients. My favorite is on the grill with a simple sauce, mozzarella cheese and basil. My kids love it loaded with meat. Rob likes his pizza anyway he can get it.
I was asked to review a book that focuses on Pizza so you know I said yes. Revolutionary Pizza is based on the uber popular Chicago eatery, Dimo’s Pizza. With its cult-like following Dimo’s has been serving up unique and unforgettable combinations of ingredients to what they call “crustomers”.
I chose to recreate the Smack ‘N’ Cheese Pizza. I noticed the first 2 ingredients were peppers and figured this would be something Rob would fall in love with. What I wasn’t expecting was the kick in the guy heat that had me cursing in front of the kids.
I doctored up the recipe just a bit with more cheese to the topping, pureeing the pepper mix for 5 seconds and adding more cream and ended up with a tasty but super spicy twist on our pizza night. What I will make over and over and over again is their basic pizza dough. It was the best I’ve ever made. One would think after making my own dough for 5-6 years I’d have a good grasp on the process. That is a complete incorrect statement. I actually do not like my dough recipe. It’s good but not great, not even really good. Dimo’s recipe for dough is like hitting the motherload.
Rob ate his Smack ‘N’ Cheese Pizza by himself. All of it. He said it was a bit spicy but that’s how he likes it. He had a little numbness in the mouth as the end of dinner. I’m planning on making this again just with less heat. As you can see this calls for an entire jalapeno, I’ll leave this out next time and definitely add more cheese for a more gooey pizza.Here is the original for you to try.
Ingredients-ENOUGH DOUGH FOR 2 PIZZAS
SMACK SAUCE
- 1 large jalapeño, roasted, peeled and chopped
- 1 (13.5 oz [399 mL]) can of chipotle peppers in adobo sauce
- 2 cups/473 mL heavy cream
- ¼ cup/30 g shredded cheddar cheese
- ¼ cup/20 g Parmesan cheese
- ½ tsp salt
- ½ tsp ground black pepper
- 2 cups/230 g of cooked, drained and cooled macaroni elbow noodles
- ¼ cup/30 g shredded hot pepper cheese
Combine ingredients for the smack sauce in a saucepan and simmer over low heat for 10 minutes, or until the sauce becomes smooth and the cheese melts completely. Toss with macaroni noodles.
If you’re making two pizzas, remember to split the ingredients equally for this part.
Use a spatula to spread the noodles and sauce mixture in an even layer across the dough. Grate the hot pepper cheese on top of the noodle mixture, evenly spread from the center of dough to the crust. Bake pizza in preheated oven at 500°F/260°C for 10–12 minutes until the crust is golden and the cheese is completely melted. Let cool for about 5 minutes to allow cheese sauce to thicken up.
