Do you know how happy I am to finally see bright blue skies and green grass. Hopefully we won’t see another flake of snow till next winter and the freezing temperatures are gone for good.

It’s spring time.  That means time spent outside, grilling, sitting around the bonfire, enjoying fresher and tastier food and drinks and enjoying the new season.  With these changes come new attitudes and cravings.  I picked up a bag of limes from the farmers market and knew they were just the right thing to get everyone else into the same spirit as me.

Margaritas are always a hit for movie night but I wanted to shake things up a bit by switching out our typically snacks with something more refreshing.  This is where my Coconut Lime Chex Mix happened.Coconut Lime Chex Mix Recipe for Spring

A little imagination is all that was needed to make this fun and scrumptious treat. I always keep a good supply of ingredients on hand just for these special occasions.

The beauty of Chex Mix is the ability to create your own flavor combination.  Put your favorite tastes together for a delicious sweet or savory snack or even dessert. Coconut Lime Chex Mix Recipe for Spring

Coconut Lime Chex Mix

Ingredients

  • 6-8 cups Chex Cereal of your choice
  • 3-4 cups air-popped popcorn
  • 1 cup white chocolate chips or vanilla candy melts
  • 4 tbls coconut oil or butter
  • 1-2 tsp fresh lime juice
  • 1  1/2 cups coconut flakes
  • 1 cup powdered sugar
  • 1-2 tsp fresh lime zest

Directions

In a VERY large or 2 large plastic zipper closure bags add the cereal and popcorn mixture. In a microwaveable bowl or measuring cup melt the butter and chocolate chips till smooth and pourable.  Add the lime juice and immediately pour over the cereal.  Stir, shake and move till it coats as much of the mix as possible.

Add the coconut, sugar and lime zest and give the mixture another good shake or stir.

The white chocolate gives it a little extra sweetness but it can be skipped.  I’d add a touch of vanilla to the melted butter though.

This is making another appearance for our upcoming girls night in as well as Easter dinner.  Come up with your own Chex Mix creations just by adding a little bit of this and little but of that.

Chex Mix Sweet and Spicy Snack for the Holidays

The stress is kicking in. I haven’t done enough prep to be ready for the holidays. I didn’t bake enough cookies, I didn’t make enough gifts, I didn’t assemble enough handmade ornaments. I DID however make another  HUGE batch of Chex Mix. This time I went with a Sweet and Spicy version that would be good for the whole family.  Rob loves spice but I wanted to make sure this one was tame enough for everyone to enjoy.

Chex Mix is one of those holiday and party staples. It’s easy to whip up and even easier to create a flavor mix that suits the season and the crowd’s tastebuds.Chex Mix Sweet and Spicy Snack for the Holidays

Open up your cabinets and see what you have on hand and start building something that will be a hit for years. Just remember to write down how you made it.

Sweet and Spicy Chex Mix

Ingredients

  • 8 Cups Chex Mix (combo of Corn, Rice and/or Wheat)
  • 1 bag of popped microwave popcorn
  • 2 cups broken garlic bagel chips
  • 3 cups small pretzels
  • 1 cups nuts of choice
  • 4 TBLS butter
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3 tsp sugar
  • 2 pinches cayenne
  • 1/4 tsp paprika
  • 1-2 tsp hot sauce (more if desired)
  • 2 TBLS olive oil

Directions

In a large microwave proof  bowl combine all of cereal, snacks and nuts.  In a small microwave bowl melt the butter and spices together, 30 seconds. Then add olive oil and hot sauce, stir and pour over the snack  mix.

Mix thoroughly with a wooden or rubber spoon to spread the seasoning blend.

Put the large bowl in the microwave for 4-5 minutes stirring thoroughly at each minute interval.

Stir Stir Stir

Allow to cool then enjoy.

*If you want more heat increase the hot sauce and cayenne pepper.

S’mores Chex Mix

Halloween in just weeks away and the neighbors and I are planning a big community party and parade. We’re a small community but there are lots of families that would really enjoy this event. I’m in charge of snacks for the party after the parade. Our S’more’s Chex Mix isn’t geared just towards the kids though. This fall favorite flavor seemed like a no-brainer when it come to putting together a menu plan for our party. Our weekend firepits are gonna have to come to a stop sometime soon but the flavors can be enjoyed all year long just by whipping up a quick batchS'mores Chex Mix Muddy Buddies Halloween Treat #ChexMix

S’mores Chex Mix
Ingredients

  • 3 cups Vanilla Chex
  • 3 Cups Rice Chex
  • 3 cups graham cereal or teddy bear graham cookies
  • 1 1/2 cup chocolate chips
  • 2 TBLS butter
  • 1/4 cup heavy cream
  • 1 1/2 cup mini marshmallows
  • 1-2 cups powdered sugar

Directions

In a large bowl combine cereal/cookies and half of the mini marshmallows.
In a double boiler melt chocolate with butter and cream till smooth.
Pour melted chocolate over cereal/cookie mixture and stir with a rubber spatula for 1 minute.
Add remaining marshmallows and continue to stir till cereal/cookies are coated with chocolate.
Add powdered sugar 1/2 cup at a time and thoroughly mix/shake to coat cereal/cookie mixture. Add more or less sugar as you prefer.
Store in a tight storage container.

Keep this gluten free by omitting the graham cereal and cookies and adding more Rice or Corn Chex. Or add gluten free graham cookies that can be found at many grocery stores today.

Candy Bar Chex Mix Recipe #kidsinthekitchen

My focus seems to be on snacks lately.  My pantry and fridge are full but nothing is grabbing my attention. Chex Mix to the day.  I love snagging a bag of Chex Mix at the grocery store and gobbling it down while watching a show with Rob.  The kids come home from school ravenous and are instantly digging through the pantry for a snack.  Since Halloween was around the corner they instantly ask for candy.  I’m not a mean mom but I really hate saying ok to candy. BUT I’m ok with making my own candy and letting them eat that.

Candy Bar Chex Mix is the creature that come from that wacky thought process.

Candy Bar Chex Mix #kidsinthekitchenWith $50 in hand, a list of ingredients a 1/2 page long and 4-5 recipe ideas in my head I went to the store to load up on Chex cereal varieties and all kinds of “toppings”.  Then once dinner was done and cleaned up Shae and I made dessert, Candy Bar Chex Mix. Making any kind of Chex Mix usually requires very little to no cooking.  For some mix-ups you’ll want some kind of liquid to coat the cereal and ingredients. For this particular recipe a caramel was made. Since making caramel can get really hot I did that part on my on.

Shae measured out and put all the dry ingredients in the bowl. I showed her 1/4 and 1/2 on the measuring cup so she could do it all by herself.  Mixing in the caramel was my job.

Candy Bar Chex Mix #kidsinthekitchen

Ingredients

4 cups Chocolate Chex

1/4 cup chocolate chips

1/4 cup white chocolate chips

1/2 cup mini marshmallows

1/2 cup butter

1/2 cup brown sugar

pinch salt (optional)

1 tsp vanilla

1 cup lightly salted peanuts

Directions

In a large mixing bowl add in cereal, chocolate chips and marshmallows, stir to combine and set aside.

Candy Bar Chex Mix

In a saucepan over medium heat melt down butter and brown sugar. Bring to a boil for couple minutes till it reaches 220°. Having a candy thermometer comes in handy but the mixture should have a foamy bubbly look and getting darker in color.

Remove from heat, add salt, vanilla and peanuts and stir.

Using a rubber spatula stir the cereal mixture as you pour the caramel on top.  Stir and stir until everything is coated. Some of the marshmallows and chocolate chips will melt, that is OK.

Once everything is combined pour this mixture out onto a sheet of foil or parchment that has been lightly sprayed with cooking spray.  Let it cool down.

Candy Bar Chex MixEnjoy slightly warm and messy or package up into treat bags to pop into the kids lunch bag or to give to the kids.
