A Passion for Paleo: Decadent Desserts That Won’t Derail Your Diet

The Paleo Diet has become more and more popular over the years, and for good reason. The basic tenet of the diet is that you eat as our ancestors did: meats, vegetables, and unprocessed foods. The upshot to this is that you tend to eat “cleaner” on the diet than normal, which helps cut out preservatives that may be unhealthy for you.

The Paleo Diet also has a somewhat undeserved reputation for not allowing you to eat many sweets. Sugar and some flours are cut out of your diet when you start Paleo, so if you have a sweet tooth, good desserts may be hard to come by. Fortunately, there are recipes out there that you can find and use to make decadent desserts for all occasions. Here are some great ones to try out.Paleo Dessert

Cookie Dough Fudge

If you find yourself reaching for the cookie dough before you even give it a chance to bake, you’ll love this recipe. It uses cashews and cinnamon, so it’s nutritious as well as delicious.

What You’ll Need:

Eight tablespoons of ghee, three cups of raw cashews, 1 tablespoon melted coconut oil, ¼ cup coconut flour, ¼ cup melted raw honey, ½ teaspoon sea salt, ½ teaspoon vanilla extract, ⅛ teaspoon cinnamon and one cup of chocolate chips.

Melt the ghee and grind the cashews into meal using a blender or a mortar and pestle. Drizzle the coconut oil into the meal and mix until it turns into a dough. Add the rest of the ingredients and mix well. Place the finished dough in plastic wrap and put in the freezer to chill for about 20 minutes.

Fold the chocolate chips into the chilled dough and then spread it in a nine-by-five inch loaf pan lined with parchment paper. Place back into the freezer. In another 20 minutes, the fudge should be ready. Cut into 15 pieces and enjoy!

Coconut Ice Creamcoconut is Paleo Friendly

Although our ancient ancestors didn’t have the chance to make ice cream, you can still enjoy the chilled dessert when you’re on the Paleo Diet.

What You’ll Need:

An ice cream machine, two eggs, one teaspoon vanilla extract, two cans of organic coconut milk, ½ cup of maple syrup, ¼ cup of chocolate chips.

Combine the eggs, coconut milk, maple syrup and vanilla using a whisk or a blender. Using an electric blender will make it easier. Pour the combination into your ice cream maker and turn on for 20 minutes. Add the chocolate chips and turn the machine on again for another 10 minutes. Pour the mixture into airtight containers and place in the freezer for about three hours. Once the ice cream sets, enjoy as often as you want to.

Chocolate Chunk Cookies

There’s always room for a great chocolate chunk cookie, even when you’re on a diet. Here’s a tasty recipe that’s easy to make.

What You’ll Need:

One egg, lightly beaten, one teaspoon vanilla extract, ¼ cup coconut milk, ½ cup coconut sugar, one cup almond flour, ¼ cup coconut flour, ½ teaspoon baking soda, three ounces of chocolate chunked, and sea salt to sprinkle.

Preheat your oven to 350ºF. In a mixing bowl, combine eggs, coconut oil, coconut sugar and vanilla extract. Then add almond flour, coconut flour and baking soda. Then, add the chocolate chunks and using a spoon or scoop, drop small balls of dough onto an ungreased baking sheet. Bake for 11 to 13 minutes in the oven and transfer finished cookies from cooking sheet to a wire rack to cool.

Angel Food Cake

You can bake cakes when you’re on the Paleo Diet! This is a recipe for a light angel food cake that’s good by itself or drizzled with fresh berries.

What You’ll Need:

Twelve large, room temperature eggs, one teaspoon fresh lemon juice, ¼ teaspoon sea salt, one tablespoon vanilla extract, ¾ cup coconut or maple sugar, 1 ¼ cream of tartar, one cup arrowroot flour, 1 ½ cups cream, whipped.

Preheat oven to 350ºF. Place egg whites and lemon juice into a mixer and mix for 30 seconds, until foamy. Add the salt, cream of tartar and vanilla. Whip again until soft peaks begin to form.

Add the rest of the ingredients, sifting the flour, and transfer to an ungreased cake pan. Cook for 40 minutes or until a toothpick can be cleanly removed. Cool on a wire rack.

Rob and I scheduled a date day on a rainy Sunday in Philadelphia. We walked center city, did a little shopping and finally headed in for an early dinner. If you’ve never been to a Hard Rock Cafe you’ll be taken back by the decor. It’s bold and screams rock and roll. I have a thing for ceilings and was immediately drawn to the copper tiles and HUGE sun-like lamps. There were purple drapes held back with chains and music inspired gear all over the walls. Everything you’d expect from a Hard Rock Cafe.

It was a rainy gloomy Sunday but surprisingly it was quite crowded. There were tables of people from all backgrounds. Doesn’t music bring everyone together? We sat down and waited for our server. There was no mention of the World Burger Tour anywhere. No table card, no extra menu, no add-in to the existing menu. When our server arrived we asked and he said the only burger they were offering was the Tango Salsa Burger. I gave him a weird look cause I was really hoping to order a couple different burgers and try them all.

We settled on that burger and a few other things. First to come out was the Jumbo Combo. Who doesn’t love a little bit of everything.

Our meals came out and Rob commandeered the burger right away.

I didn’t get to taste it. He ate it before I got to even ask for a bite. Instead I ordered the MARGHERITA FLATBREAD. I ate half of it along with the side of Parmesan Fries I ordered. I’m a french fry junkie. Rob also ordered a side of specialty fries. While the burger was GONE we were able to take home all the extra food and feed 2 of our kids for dinner. Welcome Back Good Eats on Netflix #StreamTeam

As a kid, I watched a lot of cooking shows with my mom. Food Network used to be just people in their fake kitchens making food for the camera. Now it seems that everything is a competition show or a run down of chefs favorite places to eat. Not that those aren’t fun, I just miss being able to watch someone cook a meal and not worry about the time running out before they could finish.

Emeril,  Barefoot Contessa, The Naked Chef, Sweet Dreams, How To Boil Water, and most of all Good Eats with Alton Brown on Netflix. And Good Eats is now on Netflix for everyone to see. I remember loving how Alton Brown married science and delicious food into one great show. He explained how brownies and cakes are different, how yeast effects your bread, and that the cinnamon we eat isn’t actually cinnamon. He made science and cooking fun and interesting.

I showed an episode of Good Eats to Shae to introduce her to my favorite show. We watched Alton make cinnamon rolls from scratch and both of us were instantly craving some. We decided to make some from his recipe for breakfast one day. However, it was a two day recipe so we would have to wait until the next morning to enjoy our delicious buns.

It was definitely the most involved recipe I’ve ever made. I prepared the dough myself and then let it rest all day. After dinner we mixed up our filling and rolled out our dough on the counter.

We had to leave them in the fridge overnight but in the morning, we were ready to bake and consume. They needed to proof with some hot water in the oven before we could bake. Waiting was torture, the buns were so close to being ready. Finally, we could bake them. We waited not so patiently for them to be ready. While we waited, I made the icing. We pulled out a delicious and beautiful pan of cinnamon rolls.

Doctor Up Store Bought Ingredients

Creating meals and desserts from scratch might be the the best way to nourish your family but who really has time to home cook every single meal. Even though I work from home, meal plan and enjoy cooking and baking I can’t prepare everything for a meal homemade. When I can I do but when I can’t I doctor up store bought ingredients to make my own. These little cheats are a great way to create meals that are your own but without the hassle of too many pots, pans and ingredients when you’re low on time, budget and even interest.

Doctor Up Store Bought IngredientsI know my family would love the taste of a long, slow simmered tomato sauce for our pasta dishes but I just DON’T want to babysit something like that so I opt for my kitchen hack instead.

Create a wonderfully Spicy Pasta Sauce using what comes in a jar as a base. It’s easy to make it all your own with the addition of herbs, vinegar and browned meats. My little trick is to saute a lot of garlic, 5 cloves, in 1/4 cup of olive oil and 2 tsps of butter over low heat so it doesn’t burn. Let that go for a couple minutes, add 2-3 pinches of red pepper flakes, 2 tbsp of red wine vinegar then your jarred sauce. These couple little steps gives your sauce a whole new depth of flavor with very little effort.Doctor Up Store Bought Ingredients

With Holidays centered around the dining table you want to serve dishes that you are proud of. Boxed Stuffing mix can easily be elevated with the addition of sauteed diced veggies, chopped apples and cooked crumbled sausage. No one has to know you took a shortcut.

Instant Mashed Potatoes are not my favorite dish. I always have them on hand though. They make a delicious thickener for soups and stews and bulk up homemade smashed potatoes when I’m short on ingredients but making them taste good on their own takes a few extra steps.  Start with a flavorful stock instead of water and don’t be afraid to increase the butter to 4 tbls as well as 1/4 cup of sour cream. While we LOVE to use our smoker for pulled pork and wings and brisket I’m not big on BBQ Sauce. That doesn’t mean everyone else in my house isn’t. This means we always have bottled stuff in the house. This is one of the simpler things to spruce up.  With the addition of hot sauce, honey, Worcestershire and molasses you can prepare something that no one will ever expect came out of a bottle.

Homemade baked goods are the best things are earth, that is until it is you having to make them. There was a time when I loved baking cakes from scratch but these days I just don’t have the time. This goes for Frosting. Buy  what you can from the store and give a simple vanilla flavor a new life with the addition of 1/2 cup creamy peanut butter, pinch of sea salt and a drizzle of heavy cream.  Chocolate frosting can be made better with non other than MORE chocolate. Mix 1/4 cup melted chocolate and 1/2 cup powdered sugar till you get the right consistency.  For a more gourmand experience top your sweets with chopped nuts, coconut or even chocolate chips.

A $.69 box of corn muffin mix is hard to pass up so don’t. With the addition of a 6oz plain or vanilla yogurt you’ll end up with a sweeter moist Cornbread.Doctor Up Store Bought Ingredients

If you went through all the trouble of making a beautiful roast chicken you should also serve a delicious Gravy on the side. Start with caramelized chopped onions and garlic, crushed thyme and pan drippings and top that off with a jarred gravy of choice to ensure you have plenty.

There was a time when Shae didn’t like my homemade mac and cheese. This broke my heart but she was little so I knew it would just take a little time to change her taste buds. In order to get the rest of the family to eat boxed Mac and Cheese I doctored it up by adding 1/2 cup shredded cheese and whole milk. This 2 little changes make a huge difference, enough to get the rest of the family to eat it once in a while. For a bigger treat top the prepared dish with bread crumbs and toss under the broiler for 2-4 minutes for a crisp crust.

Now that Halloween is over we’re emerging from our candy coma and enjoying some simple baking again. This past week we’ve had homemade carrot cake, mini peanut butter cookies and these Cheesecake Pasty Pockets. If it were up to me I would’ve added chopped frozen strawberries to the cheesecake filling, or served with a fruity dipping sauce OR dipped them in a melted chocolate sauce.

Making these was easy but even easier when you use premade pastry dough. These Goya discs are a great size, don’t need cutting, rolling or any prep.

Cheesecake Pastry Pockets

Ingredients

  • 8oz cream cheese, softened
  • 1 egg yolk
  • 1/3 cup plus 2 tbls of sugar
  • 1/2 tsp vanilla extract
  • pinch of salt
  • pastry dough, thawed

Directions

In the bowl of a mixer beat cream cheese & 1/3 cup sugar till combined.  Add egg yolk, vanilla and salt and blend till smooth.

Add a heaping spoonful of cream cheese mixture to each pastry dough and fold and pinch closed.

Top with additional sugar sprinkle and bake at 350° for 18-22 minutes till golden brown.

Serve room temperature, topped with powdered sugar, fruit or caramel sauce.

Sausage of all kinds is one of our favorite meats. We grill it, saute it, crumble it on pizza and even roast it over the campfire. It made sense to create a meal surrounding it. Jimmy Dean Sausage is a staple in our house so with a roll of their Premium Pork Regular Sausage (Sage Sausage would be great too) and basic ingredients I made a meal that the family loved.

Potato, Mushroom & Sausage Bake

Ingredients

  • Jimmy Dean Pork Sausage Roll
  • 3 lbs potatoes, cut into 2″ cubes
  • 2 celery stalks, diced
  • 1 medium onion, sliced
  • 1 lb baby Portobello mushrooms
  • 1 tsp dried thyme
  • 1/4 red wine vinegar
  • 1/4 water
  • 1 cup finely chopped granny smith apple
  • salt, pepper, garlic powder as needed

Directions

In a large stock pot over medium heat cook & crumble Jimmy Dean sausage.
Remove & drain sausage and set aside. Wipe pan of excess liquid or fat. In same pan saute celery, onions, mushrooms and thyme till just tender.
Remove veggies and set aside.
In same pot, add potatoes, salt, pepper, garlic powder & water, cover pot and cook for 10 minutes over low heat.
Add red wine vinegar to deglaze pan and scrape up bits cooked onto pan. Stir in sausage, veggies and apple.
Transfer to large casserole dish and bake uncovered for 20-30 minutes at 350°.
Top should be golden brown and crisp.
Serve with steamed veggies of choice for a balanced dinner with the family.

This served our family of 5 with some leftover. I had the best lunch the next day. This is a great make ahead meal. Do all the steps except baking. Bring to a potluck dinner, new family in the neighborhood or double the recipe to have another meal on hand for those busy holiday shopping days. In fact we keep cooked sausage in our fridge most of the time. It’s a simple way to create a healthy but quick pasta dish or bulk up an omelette for breakfast and of course as our favorite pizza topping.

Sweet & Spicy Garlic Chili Chicken #recipe

It was a hot and humid day and I had no desire to man the grill to cook dinner. The house was cool because the air was cranked down to 70 degrees so the kitchen felt very good to cook a meal. I’d been craving Chinese food for days but instead of ordering I created. Our favorite General Tso’s Chicken inspired this Sweet & Spicy Garlic Chili Chicken.

I had 8 small chicken breasts from Five Star Home Foods to use and I wanted something that was different from our normal meals.  I also knew I had to make lots of adjustments to the heat level for different members of the family. Rob loves lots of spice and heat. Sabreena and I can deal with some heat but Shaun and Shae have more tame palates. The sauce on the side provides the kick that Rob likes. Doing a separate sauce lets each person add just as much as they want.

 

Sweet & Spicy Garlic Chili Chicken

Ingredients

  • 2-3 lbs boneless skinless chicken breasts cut into 2″ pieces
  • 1 tsp Sesame oil
  • 2 TBLS Soy Sauce
  • 3 TBLS Chili Garlic sauce (Huy Fong Vietnamese Chili Garlic Sauce is my go to)
  • 2 tsp chopped garlic
  • 1 tsp black pepper
  • 2 tsp Rice Wine Vinegar
  • 1 tsp ground ginger
  • 1 cup cornstarch
  • 1 cup chopped carrots
  • scallions
  • jalapenos
  • cooking oil for frying

 Spicy Chili Sauce

  • 1/3 cup chili garlic sauce
  • 2 TBLS honey (or more)
  • 1 tsp soy sauce

Directions

In a large bowl thoroughly mix together the chicken, sesame oil, soy sauce, chili sauce, garlic, black pepper, vinegar and ginger and set aside for at least 2 hours.

In a small bowl mix together the chili garlic sauce, honey and soy sauce. Set aside so the flavors come together. *Add more or less honey to adjust the heat level to your preference.

To cook the chicken bring 2 inches of canola or peanut oil to a medium high temperature, 350 degrees. Drain the marinated chicken and coat pieces in cornstarch, shaking off to remove excess.

Fry the chicken pieces and carrots  in small batches till just cooked, turning to brown on all sides then set aside while remaining chicken cooks. I kept mine on a plate in the oven at low heat.

Serve over rice with chopped scallions and thinly sliced jalapenos and spicy chili sauce on top or as a dipping sauce on the side.

About every 3 months a Five Star Delivery Specialist arrives with YOUR menu of food items to stock your freezer. Your new order is rotated with your existing items so there are never any surprises lurking in the back.  Food items such as chicken breasts, crab cakes or twice stuffed potatoes are individually packaged and sealed to provided ultimate freshness and convenience.  After proper temperature controlled processing of your food items are flash frozen at -50°.

Citrus Salsa Steak

Ingredients

1 1/2 Lbs. London Broil
1/2 Cup Soy Sauce
1/4 Cup Chopped Green Onions
3 Tablespoons Lime Juice
2 Tablespoons Brown Sugar
1/8 Teaspoon Hot Pepper Sauce
1 Teaspoon Minced Garlic

SALSA:
2 Navel Oranges (sectioned, peeled and chopped)
2 Tablespoons Orange Juice
1/4 Cup Chopped Green Onions
2 Tablespoons Cider and Red Vinegar
2 Tablespoons Chopped Lemon
1 Tablespoon Chopped Lime
1 Tablespoon Sugar
1 Tablespoon Fresh Cilantro (chopped)
1/8 Teaspoon Salt

Preparation

In a large resealable bag, mix all six ingredients and add the london broil. Seal and refrigerate at least two hours. (overnight is preferable) Drain and discard the marinade. Grill or broil the london broil for 4-6 minutes on each side.

To prepare the salsa, simply combine the salsa ingredients in a mixing bowl.

Cut steak in thin slices and serve with the salsa. Enjoy!

Grilled Spicy Pork Kabobs #recipe

2014 disclosureThe key to these kabobs is the mooshu pork. It’s a type of Chinese-style pork that is very spicy. If you’re not familiar with it, moo shu pork can be a little overwhelming if you’re not used to its spice level. These are the 2nd pork chops I’ve had from Five Star Home Foods. The meat itself is great quality, little fat around the edge, great pink color and a juicy bite after it’s cooked. My problem with this meal was with size/shape inconsistencies.Grilled Spicy Pork Kabobs #recipe

This plan was supposed to be grilled pork chops on the smoker, nothing fancy. When I noticed the irregular shape of the chops I didn’t want to risk uneven cooking so I adapted. Anyway I cubed the chops, marinated them in a mix of chili sauce, honey, hoisin, dijon, salt and pepper and orange juice. Grilled Spicy Pork Kabobs #recipe This was what I like to call a silent meal. Not a word was spoken at the dinner table. This usually means the meal was that good that people weren’t wasting time with words and conversation. I’m glad I made as much as I did because there was NOTHING left. I make extra so Rob has something for lunch the next day but we plowed through 6 good size pork chops. I’ll be making this again.

Grilled Spicy Pork Kabobs #recipe

Ingredients

  • 6 center cut boneless pork chops (approx 6oz each)
  • 1-2 tbls chili garlic sauce
  • 2 tbls hoisin sauce
  • 1 tsp dijon
  • 1 tsp chopped garlic
  • 2 tsp soy sauce
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup orange juice
  • 2 tsp chopped chives (optional)

Directions

Trim your chops and cut onto 1-2″ cubes. In a large bowl mix all ingredients and add cubed meat and marinate for at least 2 hours.

Soak wooden skewers in water for 10 minutes and thread 5-6 pieces of meat onto each skewer. Do not attempt to remove any marinade.

On a preheated grill (or smoker) set to 400 degrees (medium high) place the kabobs onto the grates and let cook 3-4 minutes and turn over and cook for an additional 3-4 minutes until pork is firm but not dry. Top with chopped chives for a fresh finish.

Serve over jasmine rice and steamed veggies for a balanced and delicious al fresco dinner.

Classico Family Favorites come in 3 flavors, Meat Sauce, Traditional and Parmesan & Romano.  For pizza night we went with the simplest because we also add additional ingredients or herbs to suit our taste. Right out of the jar I like the flavor of the Traditional. It brought to mind of an amazing spaghetti and homemade meatball dinner on a cool fall night. In fact with the weird cooler weather we’re already getting this August we probably are too far away from indulging in that family favorite. Unfortunately our Walmart was out of Parmesan & Romano.
