Cheesecake Pastry Pockets #kidsinthekitchen

Now that Halloween is over we’re emerging from our candy coma and enjoying some simple baking again. This past week we’ve had homemade carrot cake, mini peanut butter cookies and these Cheesecake Pasty Pockets. Shae of course took the reins on this dish and made it her own.Cheesecake Pastry Pockets #kidsinthekitchen #cookingwithkids

If it were up to me I would’ve added chopped frozen strawberries to the cheesecake filling, or served with a fruity dipping sauce OR dipped them in a melted chocolate sauce.

Making these was easy but even easier when you use premade pastry dough. These Goya discs are a great size, don’t need cutting, rolling or any prep.

Cheesecake Pastry Pockets

Ingredients

  • 8oz cream cheese, softened
  • 1 egg yolk
  • 1/3 cup plus 2 tbls of sugar
  • 1/2 tsp vanilla extract
  • pinch of salt
  • pastry dough, thawed

Directions

In the bowl of a mixer beat cream cheese & 1/3 cup sugar till combined.  Add egg yolk, vanilla and salt and blend till smooth.

Add a heaping spoonful of cream cheese mixture to each pastry dough and fold and pinch closed.

Top with additional sugar sprinkle and bake at 350° for 18-22 minutes till golden brown.

Serve room temperature, topped with powdered sugar, fruit or caramel sauce.

She knew she had to be quick after adding the cheesecake filling so she could fold the dough.  I helped reinforce the pinch when she was done so we didn’t have any major catastrophes.Cheesecake Pastry Pockets #kidsinthekitchen #cookingwithkids

She’s really good at working the mixer lately. She’s learning how to lower the mixing head more gently and click the speed toggle one notch at a time. She’s so cute as she’s counting and measuring.Cheesecake Pastry Pockets #kidsinthekitchen #cookingwithkids

I honestly think these are better than traditional Rice Krispie Treats. No more sweeter but with a different flavor because of the oat cereal. Shaun was my chef on hand this time. The ingredients list is easy, marshmallows, butter, cereal and salt. Yes salt, trust me.

Lucky Charms Marshmallow Treats #recipe #kidsinthekitchen #cereal #sweettreats

Ingredients

  • 16 oz large marshmallows (approx 1 bag plus 1 cup)
  • 11oz box of Lucky Charms
  • 4 tbsp butter
  • 1/4 tsp salt

Directions

Prepare large baking dish with cooking spray and set aside.
Separate the marshmallow and cereal into their own bowls.
Sprinkle 1/3 of Lucky Charm marshmallows on the bottom of baking dish.
In a large saucepan set over medium/low heat melt butter and then add marshmallows and stir till completely melted.
Add cereal and stir till thoroughly coated. Then add remaining marshmallows and quickly stir.
Pour into baking sheet and with a plastic sandwich bag coated in cooking spray press the mixture down and shape into corners and edges.
Let cool for 10 minutes then enjoy.

Salad and Sandwich Bites #kidsinthekitchen

It’s almost time to go back to school and Shae and I are working on some new lunch ideas. I’m trying to stick with healthy options but I also want her to enjoy what she’s eating to that means getting her input. These mini Salad and Sandwich Bites are a great compromise. She likes bologna. It’s been one of my “do not buy” items for many years but her daddy does what she says.  Fine, I’ll live, so will she. These bite-size salad and sandwich in one can be made with any ingredients.

Ingredients

lunch meat (we used bologna)

Cheese (we used american and a mozzarella stick cut into strips)

mayo & honey mustard or dressing

salad greens

cucumbers

shredded carrot (but carrot ribbons would work better)

Directions

Cut your meat in half and spread with choice of mayo or mustard. Lay your cheese in the middle along with your child’s choice of veggies.

Shae placed 1-2 pieces of greens, a cucumber slice and a few carrot shreds.

Pickles, sliced hardboiled egg, radishes and roasted red pepper would all work great.
