CHA! HOISIN-GLAZED ROASTED CHICKEN WINGS

These lip-smacking, delicious, party-style chicken wings are marinated in CHA! by Texas Pete® and roasted in the oven until golden brown and delicious, then finished with an explosive CHA! hoisin glaze.

YIELD: 48 party wings

PORTION (Serving Size): 1 party wing

INGREDIENTS:

Wings

Chicken wings, fresh: 4 lbs. or 48 party wings

CHA! by Texas Pete®: 1 cup

Butter, salted: 1 stick

Salt and pepper to taste

Glaze

CHA! by Texas Pete®: 1⁄2 cup • Hoisin sauce: 3⁄4 cup

Scallions, sliced thin for garnish: 1 bunch

PREPARATION:

Marinate the chicken wings in the CHA! by Texas Pete® for 24 hours. Preheat the oven to 400 degrees Fahrenheit. After 24 hours, place the chicken wings in a large mixing bowl. Melt the stick of butter and pour over the chicken wings. Season with salt and pepper and mix well. Place the chicken wings on as many baking trays as needed, keeping space between each chicken wing and not over-crowding the pans. Roast the chicken wings in the oven for approximately 45 minutes or until golden brown, crispy, fork tender and fully cooked to an internal temperature of 165 degrees. Flip them once halfway through the cooking process so they crisp evenly on both sides. Depending upon the size of the wings, you may need to cook them for over an hour. While the wings are cooking, prepare the glaze and slice the scallions.

Mix the 1⁄4 cup of CHA! by Texas Pete® with the 3⁄4 cup of hoisin sauce and mix well. When the chicken wings are finished cooking, carefully place them into a large mixing bowl and toss them with the spicy CHA! hoisin glaze. Arrange the chicken wings on a serving platter, garnish with the sliced scallions and serve.

Ingredients

  • 16 oz large marshmallows (approx 1 bag plus 1 cup)
  • 11oz box of Lucky Charms
  • 4 tbsp butter
  • 1/4 tsp salt

Directions

Prepare large baking dish with cooking spray and set aside.
Separate the marshmallow and cereal into their own bowls.
Sprinkle 1/3 of Lucky Charm marshmallows on the bottom of baking dish.
In a large saucepan set over medium/low heat melt butter and then add marshmallows and stir till completely melted.
Add cereal and stir till thoroughly coated. Then add remaining marshmallows and quickly stir.
Pour into baking sheet and with a plastic sandwich bag coated in cooking spray press the mixture down and shape into corners and edges.
Let cool for 10 minutes then enjoy.

Grilled Spicy Pork Kabobs #recipe

2014 disclosureThe key to these kabobs is the mooshu pork. It’s a type of Chinese-style pork that is very spicy. If you’re not familiar with it, moo shu pork can be a little overwhelming if you’re not used to its spice level. These are the 2nd pork chops I’ve had from Five Star Home Foods. The meat itself is great quality, little fat around the edge, great pink color and a juicy bite after it’s cooked. My problem with this meal was with size/shape inconsistencies.Grilled Spicy Pork Kabobs #recipe

This plan was supposed to be grilled pork chops on the smoker, nothing fancy. When I noticed the irregular shape of the chops I didn’t want to risk uneven cooking so I adapted. Anyway I cubed the chops, marinated them in a mix of chili sauce, honey, hoisin, dijon, salt and pepper and orange juice. Grilled Spicy Pork Kabobs #recipe This was what I like to call a silent meal. Not a word was spoken at the dinner table. This usually means the meal was that good that people weren’t wasting time with words and conversation. I’m glad I made as much as I did because there was NOTHING left. I make extra so Rob has something for lunch the next day but we plowed through 6 good size pork chops. I’ll be making this again.

Grilled Spicy Pork Kabobs #recipe

Ingredients

  • 6 center cut boneless pork chops (approx 6oz each)
  • 1-2 tbls chili garlic sauce
  • 2 tbls hoisin sauce
  • 1 tsp dijon
  • 1 tsp chopped garlic
  • 2 tsp soy sauce
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup orange juice
  • 2 tsp chopped chives (optional)

Directions

Trim your chops and cut onto 1-2″ cubes. In a large bowl mix all ingredients and add cubed meat and marinate for at least 2 hours.

Soak wooden skewers in water for 10 minutes and thread 5-6 pieces of meat onto each skewer. Do not attempt to remove any marinade.

On a preheated grill (or smoker) set to 400 degrees (medium high) place the kabobs onto the grates and let cook 3-4 minutes and turn over and cook for an additional 3-4 minutes until pork is firm but not dry. Top with chopped chives for a fresh finish.

Serve over jasmine rice and steamed veggies for a balanced and delicious al fresco dinner.

Panko Crusted Cod #recipe #fivestarhomefoods

2014 disclosureOne of the very first dishes I made with my Five Star Home Foods delivery was Panko Crusted Cod.  I’m not one to fry my food, like ever so I baked this dish. Fish is one of those meals that everyone eats, but unfortunately I don’t make very often.  I’m picky about my fish, I don’t like strong flavors or oily textures so I stick with mild white fish. The meats from Five Star Home Foods is individually packed. This makes it great to take out just what you need for a meal. We’ve found ourselves recently with no kids in the house so making dinner for just Rob and I was very simple. Panko Crusted Baked Cod

Ingredients

  • 2lbs of Cod filets
  • 1 1/2 cups Panko bread crumbs
  • 1/2 cup seasoned breadcrumbs
  • 1tsp lemon pepper seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp chili powder
  • olive oil
  • 1  1/2 cups chopped tomatoes
  • 1/2 cup chopped roasted red peppers
  • 1/2 cup fresh chopped parsley
  • 1 tsp red wine vinegar
  • salt & pepper to taste

Directions

Preheat oven to 400 degrees. Line a baking sheet with foil and place a greased rack on top. Oil your rack to avoid sticking.

Using paper towels, thoroughly dry your fish pieces.

Mix breadcrumbs and seasonings in wide dish.

Lightly brush fish with olive oil and dredge through breadcrumb mixture pressing it onto the fish.

Place on prepared rack over baking sheet.

Bake for 24-28 minutes till breading is crisp and fish is flaky.

Top with a mix of tomatoes, red peppers, drizzle of oil, red wine vinegar, salt and pepper. Panko Crusted Cod #recipe #fivestarhomefoods

I also topped the brown rice with basil pesto for added flavor.

Our pieces were all different sizes. While this works well for our family I couldn’t serve this to guests.  I wish the filets were more uniform in size so it guaranteed a more concise cooking time. I took out the smaller pieces early so not to overcook them.

Sautéed Shrimp and Risotto #kidsinthekitchen

Sometimes dinner gets fancy. Especially when Shae starts leafing through my cookbooks. This is how our Sautéed Shrimp and Risotto dish happened.

Rightfully so too. She peeled the shrimp, cut them, stirred the risotto, added some of the stock, added the spice and flavors. This was only my 2nd or 3rd attempt at Risotto. I was a bit hesitant at first but hey why not learn together. It feels like a lot of ingredients but it all comes together very easily. Skip the shrimp if you want or switch meats or add veggies. We went simple this time around but will doctor it up more next time.

Sautéed Shrimp and Risotto

Ingredients

  • 1 1/2 lbs peeled, deveined shrimp cut into bit size pieces
  • 4 cups quality chicken stock
  • 1 tsp fresh thyme
  • 3 tbls butter
  • 1 tbls olive oil
  • 1/2 cup finely diced onion
  • 2 tsp finely chopped garlic
  • 1 tsp salt
  • 1/2 tsp fresh cracked pepper
  • 1 1/2 cups Aborio rice
  • 1/4 parmesan cheese

Directions

Peel & clean your shrimp, chop them into bite size pieces and season them. We used salt, pepper, red pepper flakes and Mrs. Dash Onion & Garlic. Set aside

In a medium saucepan add 4 cups of stock and thyme, bring up to a simmer then set to low to keep warm.

In a large stock pot heat butter & oil over medium heat. Add onions, garlic, salt, pepper and cook till softened, approx 6-8 minutes.

Add Aborio rice and stir till coated with onion mixture. Slowly add ladles of the hot stock and continually stir the rice till stock is absorbed. This should take 20-25 minutes.

Stir in parmesan cheese just before serving.

The rice should be soft but not mushy with a smooth “sauce” coating it.

In another pan over medium high heat drizzled with 1tsp olive oil quickly cook your shrimp till golden brown, about 6 minutes.

Serve the shrimp over the risotto.

After our tropical vacation last week Shae came home craving refreshing and exotic drinks with umbrellas and whipped cream. Easy might for us might not be for you. The hardest part of the whole process was making watermelon juice. This required a blender and straining out the pulp and seeds to get a smooth liquid. it just took minutes but depending on your own child this could be boring or too cumbersome for them.Watermelon Lemonade made by kids #kidsinthekitchen #cookingwithkids

Watermelon Lemonade

Ingredients
1 Part Watermelon Juice
2 Parts Prepared Lemonade (from scratch or mix)
Ice, Pitcher, Stirrer, Strainer, Blender

Directions
Start with putting your cut watermelon into a blender and process till smooth. Work that mixture through a strainer to end up with a smooth liquid suitable for drinking.

Mix together 1 part of your watermelon juice with 2 parts lemonade. Be aware that as this mixture sits it will separate making for something not very pretty to look at. She’s really getting more and more comfortable in the kitchen as each day goes by. She helps with many meals when it comes with prep, mixing, cooking or even serving. Frozen Banana Pops #kidsinthekitchen

You know I’m always on the hunt for new snacks and treats for the kids. Lately they seem to be asking for ice cream all the time. Our pool snackbar has ice cream so it happens more often that it’s becoming an afternoon snack versus a once in a while treat. We set out in the kitchen with 3 bananas and a wide array of toppings and “glue” ideas. This turned out to be one of the messiest kitchen adventures yet. It was also one of the tastiest the kids said.Frozen Banana Pops #kidsinthekitchen #recipe, cooking with kids

I scoured the cabinets and pantry for topping ideas. Candy and nuts were the most obvious. Then came the glue. You need an ingredient that will hold the toppings onto the banana.Frozen Banana Pops #kidsinthekitchen #recipe, cooking with kids

Ingredients
Bananas
toppings (chopped toffee, mini chips, sprinkles, chopped nuts, coconut, sugar crystals, chopped dried fruit, granola)
candy melts
yogurt
peanut butter or other nut butter
nutella
popsicle sticks, parchment paper

Directions
Peel and slice your bananas into 3 pieces.
Slide a popsicle into each piece.
Place into freezer on a piece of parchment or waxed paper for 30 minutes.
When bananas are frozen have children dip them or coat them in their preferred topping. Peanut Butter is difficult, warming it would be beneficial.
Immediately coat them in their desired toppings and set them down again on the paper and freeze for another 30 minutes.

Cinnamon Apple Crisp #recipe #kidsinthekitchen

I love having a helper in the kitchen. Especially one that can read, measure (for the most part) and mix without getting most of the ingredients on the counter. Shae is gonna be one hell of cook and baker when she grows up because she’s always wanting to make something.  This week’s Cinnamon Apple Crisp went through a few phases starting with blueberry peach to just peach to strawberry then to apple because we knew that is something that everyone would eat. Apples are a hot commodity in our house so I had to make a special trip to the store to get more.  Our apple drawer had some supply but not enough for a cobbler recipe and for the kids to eat one a day like they usually do. Kids in the Kitchen making Cinnamon Apple Crisp #kidsinthekitchen

Shae was definitely my sous chef for this one. The peeling and slicing of apples I did as well as the chopping of the nuts.  Otherwise she mixed and assembled and mixed some more to get this cobbler put together and in the oven in time for dessert. This is a keeper for sure and what’s more patriotic than APPLES.

Ingredients

  • 6-8 granny smith apples, peeled, cored and sliced
  • juice from 1/2 lemon, about 1 tsp
  • 1 TBLS cinnamon
  • 3/4 cup of sugar
  • 1/8 tsp salt
  • 1 tsp cornstarch
  • 3/4 cup of flour
  • 1 cup brown sugar
  • 1/8 tsp salt
  • 3/4 cup butter, slightly softened
  • 1/2 cup chopped walnuts or pecans

Directions

Preheat oven to 350 degrees. Remove butter from fridge

In a large mixing bowl add apples, lemon juice, cinnamon, sugar, salt and cornstarch. Toss till apples are evenly coated.

Pour mixture into a 9×12 baking dish, set aside.

In a separate mixing bowl add flour, brown sugar, salt, butter and chopped nuts and blend till mixture comes together .

Scatter pieces of your brown sugar mixture evenly on top of apples till covered.

Bake for 40-44 minutes till apples are bubbly and topping is crisp.

I think next time I might make add brown sugar to the apples to get a more caramel-y sauce.

Prep Time: 30 minutes

Cook Time: 40 minutes

Yield: 8 servings

Cinnamon Apple Crisp

A Classic Apple Crisp with a boost of spice sweet cinnamon. Served with ice cream or whipped cream this is a crowd pleaser either warm or room temperature.

Ingredients

  • 6-8 granny smith apples, peeled, cored and sliced
  • juice from 1/2 lemon, about 1 tsp
  • 1 TBLS cinnamon
  • 3/4 cup of sugar
  • 1/8 tsp salt
  • 1 tsp cornstarch
  • 3/4 cup of flour
  • 1 cup brown sugar
  • 1/8 tsp salt
  • 3/4 cup butter, slightly softened
  • 1/2 cup chopped walnuts or pecans

Smack ‘N’ Cheese Pizza #recipe Revolutionary Pizza #giveaway

For the last 7 years Friday night has been Pizza & Movie Night in the Babiak Household. It started with ordering pizza to buying dough from a local pizzeria to then making dough from scratch. We’ve had many variations of pizza with many different ingredients. My favorite is on the grill with a simple sauce, mozzarella cheese and basil. My kids love it loaded with meat. Rob likes his pizza anyway he can get it.

I was asked to review a book that focuses on Pizza so you know I said yes. Revolutionary Pizza is based on the uber popular Chicago eatery, Dimo’s Pizza. With its cult-like following Dimo’s has been serving up unique and unforgettable combinations of ingredients to what they call “crustomers”.

I chose to recreate the Smack ‘N’ Cheese Pizza. I noticed the first 2 ingredients were peppers and figured this would be something Rob would fall in love with. What I wasn’t expecting was the kick in the guy heat that had me cursing in front of the kids.

I doctored up the recipe just a bit with more cheese to the topping, pureeing the pepper mix for 5 seconds and adding more cream and ended up with a tasty but super spicy twist on our pizza night. What I will make over and over and over again is their basic pizza dough. It was the best I’ve ever made. One would think after making my own dough for 5-6 years I’d have a good grasp on the process. That is a complete incorrect statement. I actually do not like my dough recipe. It’s good but not great, not even really good. Dimo’s recipe for dough is like hitting the motherload.


Rob ate his Smack ‘N’ Cheese Pizza by himself. All of it. He said it was a bit spicy but that’s how he likes it. He had a little numbness in the mouth as the end of dinner. I’m planning on making this again just with less heat. As you can see this calls for an entire jalapeno, I’ll leave this out next time and definitely add more cheese for a more gooey pizza.Here is the original for you to try.

Ingredients-ENOUGH DOUGH FOR 2 PIZZAS

SMACK SAUCE

  • 1 large jalapeño, roasted, peeled and chopped
  • 1 (13.5 oz [399 mL]) can of chipotle peppers in adobo sauce
  • 2 cups/473 mL heavy cream
  • ¼ cup/30 g shredded cheddar cheese
  • ¼ cup/20 g Parmesan cheese
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 2 cups/230 g of cooked, drained and cooled macaroni elbow noodles
  • ¼ cup/30 g shredded hot pepper cheese

Combine ingredients for the smack sauce in a saucepan and simmer over low heat for 10 minutes, or until the sauce becomes smooth and the cheese melts completely. Toss with macaroni noodles.

If you’re making two pizzas, remember to split the ingredients equally for this part.

Use a spatula to spread the noodles and sauce mixture in an even layer across the dough. Grate the hot pepper cheese on top of the noodle mixture, evenly spread from the center of dough to the crust. Bake pizza in preheated oven at 500°F/260°C for 10–12 minutes until the crust is golden and the cheese is completely melted. Let cool for about 5 minutes to allow cheese sauce to thicken up.

Spinach and Cheese Bites #Recipe #kidsinthekitchen

Finding new lunch and snack ideas for the kids over the summer is on my to-do list. We wasted no time. The first day of summer break and we were experimenting in the kitchen with classics like pizza dough and not so favorites like spinach. My kids eat what I serve but I want them to enjoy the food I make so we made these Spinach & Cheese Bites extra kid friendly with lots of cheese.Spinach and Cheese Bites #Recipe #kidsinthekitchen

Enjoy right from the oven, room temperature or warmed up from the freezer. This batch makes 24 bites(muffin size).

Spinach and Cheese Bites

Ingredients
1lb pizza dough homemade or packaged. (crescent rolls would work to)
1lb frozen chopped spinach, thawed and squeezed dry
1tbls olive oil
2 tsp garlic
1 tsp onion powder
1tsp dried oregano
salt and pepper to taste
4oz softened cream cheese
1/4 cup grated parmesan cheese
1 cup shredded mozzarella
pinch (or more) red pepper flakes

Directions

Roll out small balls of pizza dough and spread them into each well of 2 muffin tins. Set aside to rest.

In a medium-hot skillet add olive oil and spinach. Break up to cook away all the moisture. Add garlic, onion powder and salt & pepper. Set aside to cool.

Preheat oven to 400°

In a large bowl stir together your cooled spinach mixture, cheeses, pepper flakes and more salt and pepper to taste.

Add spoonful of spinach to each muffin well on top of the pizza dough.

Bake for 15-18 minutes till cheese is bubbly and dough is golden brown.Spinach and Cheese Bites #Recipe #kidsinthekitchen
