Roasted Pesto Chicken and Rice #ninjacooking plus Giveaway

A couple weeks ago Rob and I were invited to see the reveal of the Ninja Cooking System. Since I like to cook and love to try out fun appliances I knew we had to attend. The event was held at Philadelphia’s Reading Terminal Market at La Cucina, a demonstration kitchen.

The night started with fun food and drinks and introductions of the PR Team, Euro-Pro team and Stephanie O’Dea, slow cooker queen.
We got to try our hands at using the Ninja. Each team had a different recipe and each one used a different function or two. The Ninja Cooking System goes from a stovetop to oven to slow cooker in the flick of a switch.

We’ve been using it off and on for the last couple of weeks and have been pleasantly surprised. The cooking demos were done under some pressure, distraction and unfamiliarity so the end results weren’t as spectacular as I had hoped. I had confidence that the Ninja would work well in our home though. I knew with some focus and in our own environment we could create some delicious meals. I wasn’t expecting how simple everything would be though.

Roasted Pesto Chicken and Rice

Serves: 4-6
This is a delicious and simple one pot meal using the Ninja Cooking System but can be made in conventional Pots and Pans.
Ingredients
  • 1 tsp Olive Oil
  • 4 skinless boneless chicken breasts cut in half
  • salt and pepper to taste
  • 1cup of rice
  • 2 cups of frozen green beans
  • 1/4 cup prepared basil pesto
  • 1/2 cup Shredded Mozzarella
Instructions
  1. Set the Ninja Cooking System stovetop to high and brown the seasoned chicken on both sides in a tsp of olive oil.
  2. Once chicken is brown remove from pan and set aside.
  3. Do Not remove bits from pan! Add the rice and 1 cup of water and the green beans on top.
  4. Place the chicken on the roasting rack and top with pesto.
  5. Add any juices that collected from the chicken to the rice mixture and insert the rack into the Ninja on top of the green beans.
  6. Set the Ninja to Oven, 350⁰ and top with the lid.
  7. Bake for 15-18 minutes.
  8. Remove lid, top the chicken with shredded mozzarella replace the lid for additional 2-3 minutes until cheese melts.
  9. Serve and enjoy.

The chicken ended up very moist, the rice was flavorful but the green beans were a bit overcooked. I wanted to add them the last several minutes of cooking but couldn’t figure out how to remove the roasting rack without spilling the chicken all over the place. This whole meal could’ve been done in 3 separate pans but why make that mess. This is one pot cooking without it having to be a casserole or stew.

A couple differences I would’ve liked to see is the additional trivet and mitts come standard with the set. It’s such a unique product that everything should be included to get the full pleasure of using it instead of fumbling around looking for something to just work. There also needs to be a simple way to remove the hot roasting rack or baking pan from the Ninja. I tried 2 forks, tongs and oven mitts but nothing was just right. The chicken finally came out but it wasn’t simple to balance on the larger handles.

Overall I’m happy with the way the Ninja performed and cleaned up. We will have other recipes to share in the near future.

Kenmore Shares Information about Home during the Holidays

kenmore logoI’ve discussed here so many times how short on time we are on a regular schedule, can you imagine the stress we are under during the holidays with shopping, budgeting, cleaning, baking and everything else that needs to get done.

Who has the time for this?

Kenmore released the following results their inaugural Happenings at Home survey and here’s a snapshot of what’s happening across the country:

  • 65 percent of American families feel holiday stress turns their home upside down
  • 80 percent say that no matter how stressed, they leave time to enjoy the season with family
  • A mere 21 percent say family members pitch in with cleaning duties this time of year

Additional Seasonal Findings

The Kenmore “Happenings at Home” Survey identified the following additional holiday trends in American homes:

  • Quality Time is a Priority: No matter how stressed, 80 percent of Americans leave time to enjoy the season with their family and 62 percent create personal, family traditions to ensure family time and annual memories
  • Healthy Meals at the Holidays: Only 28 percent of Americans include healthy meal options at every holiday meal
  • Cleaning, Stress Rise Together: A majority of Americans (80 percent) increase household chores during the holidays and 65 percent of those note this causes the most seasonal stress
  • Dividing and Conquering Needed on the Home’s Front Lines: Only 21 percent of Americans say their families always pitch in to help with chores around the home during the holidays

One of my biggerst dillemas during the holiday mealplan is deciding what to make that hopefully everyone will enjoy.  Some family  members love beef but ham is more traditional but what about the milk allergy ridden little one who can’t have mac and cheese, is she going to enjoy stuffing?

I’ve used the mixer several times over the last couple weeks and have been thoroughly impressed with the outcome of my dishes. Every Friday is pizza night, using home made pizza dough. I’ve been making dough for about 3 years and am finally pleased with the consistency. I realized I’ve been over-mixing my dough and never achieving the right texture. Here is my Pizza Dough recipe using the Kenmore Elite 6-Qt Bowl Lift Mixer

Pizza Dough (makes approx 2lbs of dough, enough for 2 extra large pizzas)

3 tsp yeast
3 tsp sugar
1 1/2 cups of warm water (approx 105 degrees)
2 tbls Olive Oil
3 1/2 – 4 cups all purpose flour
2 tsp salt

In your 6-qt bowl add sugar and yeast and gently pour warm water on top. Let sit 2-3 minutes till you see yeast start to bloom/expand. Add 1 tbls of olive oil and using Dough Hook attachment and machine on low slowly start adding flour, start with 3 1/2 cups. Immediately add salt. Let mix for 3 minutes and then feel for tackiness. At this point add water by the drop or flour by the tsp and pulse to incorporate and mix for additional 3-4 minutes till your dough is soft and smooth like a baby’s butt(little wrinkles and air bubbles are good). I like my dough to be slightly tacky, not enough to stick to your fingers, it should still pull away. At this point remove from mixer, divide into as many pizzas you are making and set aside in warm spot to rest. I like to coat dough balls with a touch of oil and store in the over for at least 3-4 hours.

This is where you add whatever you like to your own pizza! We use pizza night to slow down and enjoy some time together. It’s been a tradition that everyone looks forward to no matter what else is going on in life.

Always Needing Something

With our move to Delaware we have been doing a lot of things to make the house ours. We have been doing a ton of yard work like weeding the garden and trying to make our deck a place to sit and hang out.

It feels like every time I turn around Melinda and I need something else for the house. I guess since we moved into a bigger and nicer house it is only natural to need and want new stuff. A few things on the list are a new coffee maker for work, outdoor lighting, deck box for storing toys and gardening tools and a storage bench for the foot of our bed for extra blankets and sheets. The list can go on and on, those are just a few of the things I can think of off the top of my head. At the end of the day we are just happy to be settled back home in Delaware.

Panasonic Jetspin Cyclone Vacuum Compares WELL to Competition

Cleaning is my least favorite thing to do. That’s why I like my cleaning products and instruments to work well. I thought I was beyond happy with my last vacuum but I was recently introduced to the Panansonic Jetspin Cyclone Vacuum and I’m loving it so far.

While it has the cyclone technology it doesn’t have the pivot, turn on a dime feature. I do miss that but check out this list of other features:

A vacuum that tells you when the carpet is clean, what gets better than that? What I really liked about the Panasonic Jetspin Cyclone is it feels sturdier, more durable than its cyclone competition. It is heavier than our most recent vacuum but the onboard tools are handy when you decide to reach for those corner cobwebs or want to dust off the drapes. I also like the idea of bagless vacuuming but worry about particles getting back in the air when emptying out the canister.

In this house we have a mix of carpet, hardwood and ceramic tile. The Panasonic Jetspin has an EZ Bare Floor Switch that gives you a quick transition from carpet to floors without the need for changing or adding attachments.

It all comes down to cleaning. How well does the Panasonic Jetspin Cyclone Vacuum measure up to other vacuums out there? I would say excellent! It have great suction power a hefty “this is gonna last a long time” feel and everything I need to get the job done throughout the entire house.

Panasonic 360 Quick Steam/Dry Iron made me a better housewife

One of my resolutions this year was to be a better housewife. Don’t laugh, I know it sounds silly but I’ve never been a fan of cleaning and other domestic duties. One thing I did used to do was iron Rob’s dress shirts. This was a day long process and I hated it but it saved us money at the dry-cleaners. I stopped doing it, ironing is just a horrible horrible chore.


I was given  a Panasonic 360 Quick iron to review and I have contemplated taking on that chore again. Ok no I won’t but I have been ironing other things, things I haven’t attempted in years. To tell you the truth I haven’t ironed anything in years.. The Panasonic 360 has actually brought me back to the ironing board many times over the last couple weeks, working out collars, smoothing wrinkles and pressing seams out of jeans and I’m excited to say they were all done easily and quickly.

The New Concept 360 Quick Steam/Dry irons have an innovative design that allows multi-directional movement without shifting materials around. Go from collar to cuff with one smooth snag-free pass of the titanium or ceramic soleplates. Auto shut-off is also a great feature for frantic moments when irons get tipped over or left one to tend to something else in the household. Dyson DC25 Animal Ball Recap

With a home daycare and three kids of our own our rugs get pretty dirty from all of the traffic. We had an upright vacuum that we have used for the last three years that cost under $100 but it never really cleaned the rugs like I would have liked. In comes Dyson to the rescue.

I know I am a guy but I was excited when we received the Dyson DC25 Animal Ball for analysis. The Dyson DC25 Animal is designed for pet hair pickup but is also great even if you don’t have pets in the house. Currently we do not have pets but are planning on it in the future so this vacuum is going to be perfect once we get a cat or dog.
The ball technology that is part of the Dyson DC25 Animal Ball is a feature that is new to me and took me a few times to get used to since I have used fixed uprights my whole life. The ball allows you to maneuver the vacuum really easy around corners and furniture but I must admit the first few times I used the vacuum I hit the wall and furniture a few times but thankfully nothing was damaged. I also like the root cyclone technology that is patented by Dyson because you don’t lose suction power while you vacuum. Lose of suction was the number one problem with our old vacuum which really caused a lot of frustration.

All Dyson upright and canister vacuums are bagless which is awesome because there is no need to buy pricey replacements bags and the filters are also washable so no need to replace those either. Another cool thing is all upright and canister vacuums come with a 5 year warranty which covers parts and labor. All uprights, canisters, handhelds and fans bought online from Dyson.com are shipped for free.

Sabreena does most of the vacuuming in our house but since we have received the Dyson I have been doing my part in keeping the rugs clean. So far I am really impressed with the Dyson DC25 Animal Ball vacuum. The ball technology is really easy to get use to and the Quick-draw Telescope Reach wand with the mini turbine head makes it really easy to clean our two sets of stairs. The bin capacity is .31 gallons which allows you to vacuum for about a week without having to empty the dirt. The power cord wraps around the back of the vacuum but the one thing that would make this vacuum that much better would be a retractable power cord. Other than that small suggestion I have zero complaints about the Dyson DC25 Animal Ball. To tell you the truth this is the best vacuum that I have ever owned. I always wondered why Dyson vacuums were so expensive but after using one for the last few weeks this Dyson is worth every penny of its retail price of $549.00.

Ultimate Holiday Wishlist – Cuisinart Mix It In Soft Serve Ice Cream Maker

I scream, you scream, we all scream for ice cream. Who doesn’t at least like ice cream let alone love it? Better yet who wouldn’t love making their own ice cream or frozen yogurt with the Cuisinart Mix It In Soft Serve Ice Cream Maker.

When our Cuisinart Mix It In Soft Serve Ice Cream Maker arrived for analysis I was super excited to break it open (not literally) and give it a try. I feel that I am a pretty handy and technical guy but man did this machine give me a little trouble during the assembly process. It took me about 15-20 minutes to assemble the machine.

Once assembled I figured all I needed to do was add the ingredients and viola ice cream. Nope. You actually have to freeze the freezer bowl (that is the actual name, DUH) for at least 12 hours but 24 would be better. I figured that was just a recommendation not a rule so I froze the freezer bowl for 6 hours prior to its maiden voyage. Bad idea because the freezer bowl needs a full 12-24 hours to freeze before use and because I didn’t follow directions my ice cream would not set up or freeze and it was just liquid. So a word to the wise, freeze the freezer bowl for 12-24 hours like stated. On my second attempt I froze the freezer bowl a full 24 hours and the ice cream came out like a champ. It was awesome and let me tell you it was good.

So lets get down to the nuts and bolts of the Cuisinart Mix It In Soft Serve Ice Cream Maker:

My family and I had a chance to try the Griddler and let me tell you I am hooked. Since we have had the Griddler we have made pancakes, eggs and roasted red pepper, mozzarella and chicken paninis multiple times. We have also made grilled cheese, chicken, burgers and hot dogs. The Griddler is super easy to use and makes cooking breakfast and dinner simple. All you have to do is select “Grill” or “Griddle” then select the temperature, wait for it to heat up and cook, that is all there is to it. My favorite dish that we have made on the Griddler so far has to be the roasted red pepper, mozzarella and chicken panini.

Here is what you need to make the roasted red pepper, mozzarella and chicken panini:

Roll or panini bread
Piece of chicken breast
1-2 slices of mozzarella cheese
3-4 basil leaves (we got these from our fresh herb garden)
Roasted red peppers (either from the jar or you can roast your own red pepper)
